Ingredients
- 4 large potatoes
- 2 cups shredded mozzarella cheese
- 1/2 cup chopped fresh herbs (e.g. parsley, chives, basil)
- 1/4 cup olive oil
- Salt and pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and dry the potatoes, then slice into 1/4-inch thick rounds.
- In a bowl, mix together the shredded mozzarella, herbs, and a pinch of salt and pepper.
- Brush both sides of each potato slice with olive oil and sprinkle with salt and pepper.
- Place a spoonful of the mozzarella mixture onto each potato slice and fold the potato over to encase the cheese.
- Place the stuffed potato slices onto a baking sheet.
- Bake for 25-30 minutes, or until the potatoes are crispy and golden-brown, flipping halfway through.
- Serve hot and enjoy!
Tips
- Don't overfill the potato slices with mozzarella mixture, or it may leak out during cooking.
- To add more flavour, try sprinkling some garlic powder or paprika on top of the potato slices before baking.
- Serve with a side of sour cream or Greek yogurt for dipping!
