Preparing a Quick and Delicious Dinner: Mozzarella Stuffed Potato Slices

Ingredients

  • 4 large potatoes
  • 2 cups shredded mozzarella cheese
  • 1/2 cup chopped fresh herbs (e.g. parsley, chives, basil)
  • 1/4 cup olive oil
  • Salt and pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry the potatoes, then slice into 1/4-inch thick rounds.
  3. In a bowl, mix together the shredded mozzarella, herbs, and a pinch of salt and pepper.
  4. Brush both sides of each potato slice with olive oil and sprinkle with salt and pepper.
  5. Place a spoonful of the mozzarella mixture onto each potato slice and fold the potato over to encase the cheese.
  6. Place the stuffed potato slices onto a baking sheet.
  7. Bake for 25-30 minutes, or until the potatoes are crispy and golden-brown, flipping halfway through.
  8. Serve hot and enjoy!

Tips

  • Don't overfill the potato slices with mozzarella mixture, or it may leak out during cooking.
  • To add more flavour, try sprinkling some garlic powder or paprika on top of the potato slices before baking.
  • Serve with a side of sour cream or Greek yogurt for dipping!
